What happened on the show
The Fenwick Arms looked like a classic English pub, but Ramsay found the menu was anything but classic, its dishes wrecked by the sloppy sauces of owner and head chef Brian Rey. At sixty-two, Brian and his wife Elaine Howden were working up to a hundred and twenty hours a week, and his age and health left him unable to track orders in the Claughton kitchen. He was also a compulsive hoarder, buying up odd crockery on eBay. Ramsay pulled him out of the kitchen and onto the floor, binned a fresh batch of his terrible sauce, and got him selling off the plate collection. The menu went back to honest pub food, and Ramsay built a campaign around proper gravy to partner the pub's good Yorkshire puddings, which Brian embraced. On the revisit came the familiar reversal: short-staffed, Brian had crept back to the stove and to some old habits, though the roast beef and gravy still impressed.
