What happened on the show
At Morgans in Liverpool the food troubled Ramsay, but the feuding troubled him more. Owner Sandy Morgan knew little about running a restaurant and insisted on buying all the ingredients herself from a nearby supermarket rather than a proper supplier. Her younger daughter Laura Kelly had even less business sense; the elder, Helen Kelly, had more but only worked there part-time. Head chef Philip Lee was combative, pushed strange combinations like mashed potato with apricot, and clashed with sous chef Emma, who nonetheless made the one dish Ramsay liked, a sticky toffee pudding. It was hard going, and the family rows briefly drove Laura out altogether. Things steadied once Helen committed full-time and Phil agreed to simplify and to work with Emma. On the revisit the place ran far better, and the biggest change had landed a week after filming wrapped, when Sandy made Emma head chef and handed Phil a choice between demotion and the door. He resigned.
