The layout alone confused Ramsay at the Sandgate Hotel: a bar, a restaurant, and a Japanese restaurant downstairs, all fed from one kitchen, each with its own menu and no way to order across them. In charge of it was Stuart White, a gentle Geordie plainly uneasy cooking a range that stretched to Japanese food he had never trained in, forced to leave his junior chefs to it while he worked the balcony grill. Orders came through a disruptive intercom, the staff propped up the hotel by drinking at its own bar, and a glut of managers left nobody sure who was in charge. Midway through, Stuart lost his AA rosette, which crushed him. Ramsay still found a path: he turned the Japanese room into an exclusive dining space, refocused the menu on fresh seafood, and put owner Lois in clear control of front of house. He came back to find turnover doubled and Stuart's morale, if not yet his rosette, restored.
