What happened on the show
On Staten Island, Degel took on Trends, where owner and chef Mike was carrying both the kitchen and the responsibility for a room drifting toward trouble. The stakeout ran on the same premise as always, hidden cameras across the floor and a patient read of how the place behaved when the boss was not visibly present. As broadcast, the surveillance let Degel confront Mike with a picture of his own operation from the outside, the gap between how he believed Trends ran and how it actually did. Degel's fixes focused on the systems and leadership the room was missing, the levers he pulls in nearly every episode. The visit followed the show's core logic, that an owner too buried in the day to day to see his own floor clearly is exactly the owner a stakeout is built to help, provided he can accept what the cameras show him.
