Thirty years in, Dodge City in Harrisburg had settled into a western theme its owner refused to let anyone modernize, and that stubbornness was the real obstacle Irvine had to move. The food and the room both felt frozen in an earlier decade. Much of the episode became a negotiation, Irvine coaxing a change resistant operator into accepting updates to the menu and a freshening of the decor rather than gutting the identity the family had built. He kept the work within the standard 48 hour window and the show's tight refit fund. The compromise held: Dodge City did not just survive the makeover but grew into a fixture, later reintroduced as Dodge City Steakhouse and confirmed still serving as of our most recent verification pass, a rarer outcome than the show's drama usually suggests.
