What happened on the show
Adam Gomes could not square his meat sales against his register at his Las Vegas Brazilian steakhouse and suspected either his manager or his head waiter of skimming or letting customers walk off with leftovers, against house policy. Charles Stiles sent mystery diners Allison, Andy and Lou in as a meat distributor, a waitress and a customer. As aired, the head waiter proves a model employee while manager J.P. is caught taking food home, selling meat cheaply on the side, and running a bogus charity that traded free buffet trips for donations, a poster Lou spots holes in. The confrontation has Adam firing J.P. and threatening the police, J.P. vowing his charity will make him a hero. Given the scripting claims that later dogged the series, this churrascaria sting is best read as broadcast rather than confirmed.

Via Brasil kept carving. The family-owned Brazilian steakhouse, with a churrascaria tradition it dates to 1978, is still open at 1225 South Fort Apache Road, serving rodizio with current hours per its own site in our 2026 pass. Like several of the show's Las Vegas subjects, it was an established operation that appeared on a crisis program and carried on unbothered. No turnaround was on offer here, just a durable steakhouse that outlasted the episode by more than a decade.
