What happened on the show

The young staff at Campania treated the place like a fraternity, goofing off and drinking on shift while owner-chef Joe Cerniglia let them. The Fair Lawn Italian restaurant had once thrived, but under Joe it was sliding, weighed down by debt to a string of creditors and a fridge Ramsay found packed with waste at a restaurant that had few customers to feed. The cooking was tired: bland tortellini soup that was clearly not homemade, ravioli overloaded with garlic, dry pistachio-crusted chicken. Portions ran so large that nearly every table left a pile of leftovers, another quiet drain Ramsay tied straight to the debt. He forced Joe to cut two of his surplus staff, watched the kitchen fall apart during service, and visited Joe's home, where his wife Melissa broke down describing the money they owed. Ramsay taught the crew his meatballs and steered Campania toward something focused.

After the cameras left

Campania actually bounced back at first, one of the episode's early success stories, before mismanagement caught up with it. The Fair Lawn restaurant at 17-15 Broadway closed in 2011, a few years after Ramsay's visit. The rebound proved the food and the concept could work; keeping the operation disciplined once the cameras left was the part that never quite stuck.
