In the Letchworth kitchen of La Lanterna, Ramsay found no real Italian ingredients, just a reliance on pre-cooked and packaged food. His meal ran from greasy minestrone to breadsticks still in their wrapper to sausages on garlic bread he compared, memorably, to something obscene. The walk-in held Pot Noodles and rotting vegetables, and the floors were strewn with debris, though remarkably no vermin. The deeper problem sat in the garage: while chef-owner Alex Scott was losing a thousand pounds a week, he had spent forty-eight thousand on a new BMW with a personalised plate. Ramsay set about selling both. He brought in chef Francesco Zanchetta, coached the ineffectual manager Gavin toward some authority, ran a pizza contest that reignited the sous chef's enthusiasm, and refreshed the menu and decor with paintings from a local art school. Reopening night wobbled when Alex fell behind, but Gavin's new assertiveness held it together, and six weeks on Alex had kept to the changes and begun paying down his debt.
