What happened on the show
An owner whose life-of-the-party personality had made indulgent on-the-job drinking the house standard gave Taffer more than his usual work in San Antonio. At Country Nights, the boss's own unprofessional habits had become the house norm, a bar where the owner's partying set the tone for everyone. The rescue worked to get the owner to separate her social instincts from the standards a business requires, curbing the drinking and unprofessionalism she had normalized. Taffer reopened the venue as Madame Dalia's Country Bar, a rebrand built around the owner's personality while imposing real discipline, betting that channeling her charisma into a functional operation could steady a room her partying had been dragging down. A San Antonio room where the owner's fun-first reputation had defined the culture made discipline the hardest sell, since the very personality drawing people in was the one Taffer needed to rein back.
