What happened on the show

A tax accountant had bought a bar, and with it a bad reputation earned years earlier, then watched bartenders spend more time drinking and stirring up drama than working, all at what Taffer called one of the worst locations he had ever dealt with. Bryant's Ice House in Katy, Texas, needed a major overhaul from top to bottom, the staff, the standards and the name itself, before the combination of a poor site and a poor reputation finished it off. Taffer's rescue worked to professionalize a crew treating the job as a party and to give the room an identity strong enough to overcome its address. He reopened it as The Wildcatter Saloon, an oil-country Texas concept built to give the bar a distinctive, locally resonant hook and, ideally, a reason for customers to seek out a location that would never draw them by chance.

After the cameras left

The Wildcatter Saloon stuck and is still pouring. It kept the rescue name through the show's 2017 revisit and continues to operate at 26913 Katy Freeway, with its own website live and a March 2026 Yelp review confirming ongoing business, which puts the open call at high confidence. A bar saddled with a bad reputation and one of the worst locations Taffer had seen turned into a durable Texas saloon, landing squarely in the renamed-and-surviving column.
