What happened on the show
At Quelcuttis, siblings Joe and Terry seemed keener on running a bar than a proper restaurant, and chef Terry's cooking had suffered badly for it. Ramsay soon spotted a deeper issue in the front of house: Joe could not hold his temper during service and kept picking fights with the very guests he was supposed to be looking after. To sharpen both siblings, Ramsay sent them to work a lunch shift at Quique Dacosta, a Michelin-starred kitchen nearby, before relaunching their Els Poblets venue as Quelcutti's Tapas, built around Spanish small plates and good wine. The reopening tested Joe again: his nerves had him taking on too many orders at once and snapping at Ramsay, though he found his rhythm before the night was out and the service closed cleanly.
