An Early Bird special aimed at seniors was quietly bleeding Trobiano's dry. Young, culinary-school-trained Anthony Trobiano had talked his girlfriend Tiffany's parents into bankrolling the Great Neck Italian restaurant, and now those parents resented being dragged into a struggling business built around discounts for a crowd that took full advantage. Ramsay hated the sign the moment he saw it. The food, a tasteless eggplant tower with stale mozzarella, an incoherent chicken-wrapped shrimp, and dry salmon, matched a kitchen Anthony admitted he never cleaned himself because, he said, that is what staff is for. Ramsay accused him of not caring and nearly walked, until Anthony finally chased him down. A farm trip on freshness, a scrapped Early Bird board, a new mozzarella bar, and a tighter, better-priced menu followed, capped by a final service for a local food critic that Anthony, for once tasting his own dishes, actually pulled off.
