What happened on the show

Ramsay showed up at Fleming with a book of Danish phrases, only to learn that nobody there was actually Danish, not owners Andy and Suzanne, not the Cuban chef Orlando, just a previous owner who had sold them a Miami institution they proceeded to leave almost untouched. He struggled to find anything Danish about it at all. The food was worse than dated: the salmon gravlax was overdone and like flypaper, a comparison sharpened when a real fly appeared, the frikadelle mushy and unseasoned, the grandfather duck bone dry. Finding cross-contamination in the kitchen, Ramsay killed all duck orders and even snatched the dish off plates already sitting in front of customers. The deeper issue was Andy, whom his own manager and wife described as afraid of change and afraid to lose the little he had, clinging to a formula that had stopped working the moment it passed to him.

After the cameras left

Fleming closed in 2010, the same year its episode aired, unable to escape a reputation that it had gone downhill under new ownership. The 8511 Southwest 136th Street address in Miami is now an Orangetheory Fitness, so the long-running Danish restaurant gave way to a gym. Andy's fear of change, the thing Ramsay kept circling back to, outlasted every fix the show offered.
