What happened on the show
Nikko could not turn a profit at A Plate of Soul, and that was the problem Degel came to Jamaica, Queens, to diagnose. The hidden cameras did the show's usual work, capturing the floor when the owner assumed no one was measuring the operation, and as aired the footage gave Degel a documented picture of a Caribbean and soul food room that was busy in effort but starved of profit. His confrontation used that evidence to press Nikko on the systems and pricing that turn work into margin, while his fixes leaned on the operational discipline he prescribes everywhere. The stakeout fit the format's central promise, using surveillance to show an owner precisely where the money was leaking out of a restaurant that should have been making it.
