At The Blue Moose in Scottsdale the trouble was not theft but temperament. Longtime chef Grumpy Tom, as the episode presents him, disrespected everyone in the building, including the second-generation co-owner and manager Grey Haplin, so Charles Stiles slipped mystery diner Jessica into a waitress role to gauge the damage. The cameras catch Tom impatient, abusive, and openly contemptuous of the founding owner. When Grey confronts him he starts shouting too, and once hauled to the control room for the reveal Tom walks out before Stiles lures him back. Rather than a firing, the broadcast ends in a brokered truce and a training program.
