Rooms ran 800 dollars a night at The Keating, a boutique hotel in San Diego's Gaslamp Quarter, yet the experience did not match the price. Owner Eddie Kaen, a property developer and devoted Ferrari fan, had decorated to his own taste, favoring form over function throughout. His chef struggled to refuse the owner's menu ideas, among them a strawberry, bacon, and chocolate pizza and chicken-parmigiana sliders. Room service turned up in cardboard boxes and plastic containers, which is not what a guest paying that rate expects. Ramsay redecorated the rooms, rebuilt the menu around food a luxury hotel could actually serve, and pressed Eddie to let his staff push back and say no when an idea was bad. The core issue here was not a broken kitchen so much as an owner who treated the property as a personal design project rather than a business run for the people staying in it.

The reviews that follow it read as genuinely mixed: guests praise the San Diego location and the service, while the rooms themselves still draw the occasional complaint, an echo of the form-over-function instinct Ramsay flagged. Survival here counts as a real win, since most properties on this show never cleared that bar.
