Wichita gave Ramsay a genuine novelty, a bistro built to serve both people and their dogs, billed as the first dog friendly restaurant in Kansas. The concept was charming and the execution was a hazard. The surveillance kept finding a room short on systems and procedures, the sort of gap that turns a cute idea into a health risk once the doors open and the tickets pile up.
